Strawberry Shortcake with Rosemary
Servings: 10
 
 
Ingredients
 
2 cups strawberries, sliced
1/4 cup sugar
zest of 1 orange

For the shortcake:
2 cups sifted all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon fresh rosemary, chopped
6 Tablespoons coconut oil 
1 egg, slightly beaten
1/3 cup milk
1 teaspoon vanilla

For the whipped cream:
1 cup heavy cream
2 tablespoons confectioner’s sugar 
 
 
Preparation
 
1. In a large bowl, toss the strawberries, sugar and orange zest together. Cover and refrigerate.
2. Preheat the oven to 375 degrees F.
3. In another large bowl, whisk the shifted flour, sugar, baking powder, salt, and rosemary.
4. Next add in the virgin coconut oil. You may have to blend with a fork or your hands until a mixture comes together.
5. Add in the egg, milk, and vanilla. Mix until soft dough forms.
6. Place dough on floured surface. Knead gently until smooth.
7. Roll out to about a 1/2-inch thick. 
8. Using a round cookie cutter, cut out 10 rounds of dough and arrange 1-inch apart on a ungreased cookie sheet. 
9. Place cookie sheet in oven and bake for about 10 minutes or until golden brown around the edges.
10. Once finished, remove cookie sheet and let cool on a rack.
11. In a small bowl, assemble whipped cream. Beat heavy cream and sugar with a mixer for about 2-3 minutes until medium peaks form. 
12. Cut each short bread in half then spread about a teaspoon of whipped cream mixture on the bottom layer. 
13. Add 3-4 strawberry slices and top with another teaspoon of whipped cream. Repeat this process twice.
14. Add second half of shortbread to the top. Enjoy!
