Grilled Salmon and Pineapple with Avocado Salsa
Ingredients
1 1/2 Tablespoon extra virgin olive oil
2 teaspoons chopped fresh basil leaves
1 1/2 teaspoon chopped green onion or chives
1 teaspoon chopped fresh tarragon leaves or 1/3 teaspoon dried tarragon
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 pound salmon fillet, about 1 inch thick
4 1/2 inch thick slices of pineapple (round or lengthwise)
Avocado salsa
1 avocado diced
2 Tablespoons chopped fresh basil
2 Tablespoons chopped green onion or chives
1 Tablespoon chopped fresh tarragon leaves or 1 teaspoon dried tarragon
2 small garlic cloves, finely chopped
2 Tablespoons extra virgin olive oil
1 Tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
Directions
1. Combine all the avocado salsa ingredients in a food processor, add 2 Tablespoons of water, and process until smooth. Cover and let stand for 15-60 minutes at room temperature to blend flavors.
2.Preheat gas grill to medium high.
3.In a small bowl, whisk oil, basil, green onion, tarragon, salt, and pepper to blend. Brush the mixture on the salmon and pineapple slices.
4.Put the salmon and pineapple on the grill and cook both about 4 minutes per side until salmon is just pink in the middle and pineapple is lightly charred.
5.Transfer 1 piece of salmon and pineapple to each plate, spoon two Tablespoons of the avocado salsa over each piece of fish. Garnish with fresh herb sprigs.
6.Put the extra avocado salsa in a bowl on the table for others to use as desired.
