Air-Fried Onion Rings with Horseradish Sauce
Servings: 4
Ingredients
2 large red onions
2 cups all-purpose flour
6 eggs
2 1/2 cups panko breadcrumbs
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
1 cup olive oil mayonnaise
1 tablespoon Dijon mustard
2 green onions, finely chopped
3 teaspoons prepared horseradish (more or less to taste)
1 teaspoon lemon juice
Preparation
1. Peel and cut the onion horizontally into 3/4 inch slices. Separate the slices into rings.
2. Get three bowls: one for the flour, one for the beaten eggs, and one for the panko.
3. Add the cayenne, paprika, and pepper to the flour.
4. To coat the onion rings, follow this order for each ring: dip in egg, followed by flour, egg, flour, egg, panko. Place each ring on a metal baking sheet. Once all rings are coated, place in the freezer for at least 30 minutes.
5. While the onion rings are freezing, make your sauce: combine the mayonnaise, Dijon mustard, horseradish, lemon juice, and 1 teaspoon of salt. Mix well.
6. Preheat your air fryer to 375º F.
7. Remove onion rings from the freezer.
8. Place the onion rings in a single layer in your air fryer.
9. Spray lightly with cooking spray.
10. Fry for about 10-12 minutes or until onion rings are golden brown and crispy.
Serving Size: 1/4 of onion rings with 2 tablespoons horseradish sauce
