Here’s how you can personalize your plate for National Nutrition Month each week of March.

Use a grocery list when shopping for foods. Choose different recipes to try for the week.

3. Week 3: Learn Skills to create tasty meals.
Try new flavors and foods. Reduce food waste. Share meals with friends and family.

4. Week 4: Consult with a Registered Dietitian.

Creamy Asparagus Soup

Servings: 4

Ingredients

2 pounds asparagus, stem ends trimmed and cut into 1 inch pieces
3 Tablespoons unsalted butter
1 onion, finely diced
Salt and pepper, to taste
3 1/2 cups low sodium chicken broth
1/2 cup frozen peas
2 Tablespoons grated parmesan cheese
1/4 cup heavy cream
1 teaspoon lemon juice

Preparation

1.Melt butter in large saucepan or Dutch oven over medium heat. Add asparagus, onion, and season with salt and pepper. Stir occasionally and cook for about 10 minutes, until vegetables are softened.
2.Add chicken broth and bring to a boil over medium high heat. Reduce heat to medium low and simmer for about 5 minutes, until vegetables are tender.
3.Stir in peas and parmesan. Puree soup in a blender in two batches. Return soup to pot.
4.Stir in cream and lemon juice and simmer for an additional 5 minutes. Add additional salt and pepper if desired. Serve hot and enjoy!
