Vegan Mac n Cheese
Servings: 4
Ingredients
8 ounces elbow macaroni
1 head broccoli florets, cut into bite size pieces
1 1/2 Tablespoons olive oil
1 small yellow onion, finely chopped
1 cup peeled and grated Russet potato
3 cloves garlic, minced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dry mustard powder
1/2 teaspoon salt, more to taste
2/3 cup raw cashews
1 cup water
1/4 cup nutritional yeast
2 teaspoons apple cider vinegar
Preparation
1. Bring a large pot of water to a boil. Cook macaroni according to package directions. In last 3 minutes of cook time, add broccoli to the pot. Drain and transfer the contents to a large serving bowl.
2. Meanwhile, in a medium saucepan, heat oil over medium heat. Add the onion and cook until tender, about 5 minutes, stirring frequently. Add the grated potato and spices. Stir to combine and cook for about 2 minutes, stirring frequently.
3. Add the cashews and water to the saucepan. Bring to a simmer. Simmer until the potatoes are completely cooked through, about 5 to 8 minutes.
4. Carefully pour the mixture into a blender. Add the nutritional yeast and vinegar. Blend until the mixture is completely smooth, about 2 to 3 minutes. Tip: the mixture will be hot, so use a dish towel to hold down the top of the blender as you blend. Season with more salt, if desired.
5. Pour the sauce into the bowl of pasta and toss to combine. Serve immediately.
