Utilizing Holiday Leftovers

The holidays are a time of year when there are many delicious foods around. It may feel overwhelming to think about how to use so many options. Keep those leftovers and read below about ways to continue enjoying your favorite holiday foods!

  • Egg scramble: Toss leftover ham, turkey, or tenderloin into a sauté pan. Add in vegetables and eggs to make a yummy egg scramble for a quick breakfast.
  • Shephard pie: Layer leftover mashed potatoes, vegetables, and meat into a baking dish. Pop in the oven for a quick and easy weeknight dinner.
  • Power bowl: Toss almost any leftover ingredients together to make a quick lunch or dinner.
  • Crock pot: Need a quick dinner with little clean-up? Toss any vegetables, meat, beans, and potatoes, into a crock pot to make a soup or stew.

Leftover Cranberry and Walnut Turkey Salad

Ingredients

Leftover turkey, ~2 lbs

1/2 cup mayonnaise

1/4-1/3 cup plain, Greek yogurt (can add more for desired texture)

1/3 cup walnuts, chopped

1/3 cup dried cranberries, chopped

1/2 cup red onion, minced

Salt & pepper, to taste

Directions

1.Chop walnuts, dried cranberries, and red onion.

2.Combine all ingredients in a large mixing bowl. Mix until fully combined.

3.Add turkey salad to a wrap, sandwich, on top of a salad/bowl, or with crackers and/or veggies.
