Valentine’s Day is just around the corner. Many will receive chocolates as a tasty treat. Chocolate has gotten a lot of bad press over the years. However, there are a lot of reasons to love chocolate on Valentine’s Day and any day, for that matter.
1. It is delicious. Chocolate has a rich, unique taste that just can not be achieved by any other food. It is fantastic in sweet and savory dishes alike.
2. It contains antioxidants. These have been shown to reduce cholesterol, prevent cognitive decline, and lower the risk of heart problems.
3. Can improve athletic performance. Studies show that chocolate can improve athletic performance, particularly in cyclists.

Chicken Mole
Servings: 1
Ingredients
2 Tablespoons olive oil
1 1/2 cups yellow onion, chopped
4 cloves garlic, minced
1 Tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon cinnamon
1 8 ounce can diced tomatoes, drained
1 Tablespoon chipotle in adobo
3 ounces dark chocolate
10 ounces chicken broth
8 boneless chicken thighs
Preparation
1.Preheat oven to 350 degrees. In a large non-stick skillet, heat the oil on medium heat. Add the onion and sauté until translucent, about 4 minutes. Add the garlic, chili powder, cumin, and cinnamon and sauté for an additional 2 minutes.
2.Add the tomatoes, chipotle in adobo, and chocolate. Reduce heat and simmer for about 10 minutes. Cool slightly, and then blend until smooth in a blender.
3.Clean the non-stick skillet and heat over medium high heat, add the chicken pieces and brown on both sides, about 8 minutes per side.
4.Arrange the chicken pieces in a casserole dish. Pour the mole sauce over the top. Bake covered for 30 minutes in the oven. Remove the foil and bake for an additional 20 minutes. Serve over white rice and a side of corn tortillas.
