While Thanksgiving may be a little different this year, it is still a time of reflection. The groups may be smaller, but a feast can still be enjoyed. The turkey is typically the star of the show. However, the sides should not be forgotten. We have put together a list of Evolution Dietitians’ favorite side dishes.

Pumpkin Roll

Servings: 10

Ingredients

Roll:
3 eggs
1 cup sugar
2/3 cup pumpkin puree
1/2 lemon, juiced
3/4 cup all purpose flour
1 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Filling:
1-8oz package cream cheese
1/2 cup confectioners sugar
2 Tbsp butter, softened
1 tsp vanilla

Preparation

1. For the roll: Preheat oven to 375 degrees. In a stand mixer, beat the eggs for 5 minutes, then slowly add sugar. Stir in the pumpkin and lemon juice until well mixed.
2. In a bowl, mix together flour, baking powder, cinnamon, nutmeg, and salt. Fold dry ingredients into pumpkin mixture until blended. Do not over mix.
3. Line a rimmed cookie sheet with parchment paper. Pour batter onto cookie sheet and bake for 12-15 minutes.
4. Lay out a clean kitchen towel or flour sack. Invert the pumpkin cake onto towel and remove parchment paper. Roll the cake in the towel and let cool completely.
5. Filling: Mix the cream cheese, confectioners sugar, butter, and vanilla until smooth. Unroll the cake and remove the towel. Spread the filling evenly and re-roll the cake. Chill for 45-60 minutes. Slice the roll and serve.
