Fall Produce Guide

Shopping for fruits and vegetables that are in season at your local grocery store may help you save money. When produce is in season, there’s more of it available, which usually lowers the price. Seasonal foods also tend to taste better and may contain more nutrients. Buying in-season produce can also add variety to your diet by giving you a wider range of fruits and vegetables to choose from.

Here is a list of produce to buy this Fall season:

  • Apples
  • Broccoli
  • Brussel sprouts
  • Cabbage
  • Carrots
  • Cauliflower
  • Cranberries
  • Grapes
  • Kale
  • Onions
  • Parsnips
  • Pears

Kale and Butternut Squash

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 cups butternut squash, cut into small cubes
  • 4 cups finely chopped kale
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons dried cranberries
  • 1/4 cup chopped nuts (almonds, walnuts, pecans)
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large pan on medium heat.
  2. Add onion and garlic, cook for 3-4 minutes.
  3. Add butternut squash cubes to pan. Turn heat down to medium low. Cook until butternut squash is lightly browned and tender, around 7-10 minutes.
  4. Add chopped kale, lemon zest, and lemon juice.
  5. Season with salt and pepper.
  6. Continue to cook until the kale is wilted.
  7. Once done, transfer to a serving bowl. Add dried cranberries, chopped nuts, and crumbled feta cheese. Toss to combine & then serve.
