The holidays bring with them lots of leftovers! Once the festivities are over, we are all often left with wondering what we can do with the remaining food. Below are some ideas to repurpose your holiday leftovers.
1. Create a leftover egg dish. Add shredded turkey or diced ham and veggies to omelets, frittatas, or quiches.
2. Make it melty. Layer leftover meat, cranberry sauce, and a melty cheese onto a crusty bread and press in a panini press. If you do not have a panini press, cook it grilled cheese – style in a frying pan.
3. Casserole it. Combine leftover ham or turkey and vegetables with egg noodles for a yummy turkey tetrazzini.
4. Squash soup. Blend up leftover butternut, acorn, or even sweet potato with chicken stock for a quick and easy soup.

Sweet Potato Soup
Ingredients
8 sweet potatoes, cooked and removed from skins (steamed, baked, or boiled)
4 cups chicken broth
1/2 cup heavy cream
1 Tablespoon chili powder
1 Tablespoon ground cumin
Salt and pepper, to taste
Optional toppings: diced avocado, shredded cheese, bacon bits, sour cream, corn chips, lime.
Preparation
1.In a large soup pot, bring potatoes, chicken broth, and seasonings to a boil, just to heat potatoes through.
2.Carefully transfer the potatoes and liquid in batches to a blender and blend until smooth.
3. Return the blended soup to a pan and add in heavy cream. Season with salt and pepper to taste. Spoon into serving bowls and add any additional toppings you’d like! Enjoy!
