No Bake Strawberry Cheesecake


Ingredients

  • 1 pound fresh strawberries
  • 3/4 cup granulated sugar
  • 4 Tablespoons corn starch
  • 2 1/4 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3, 8-ounce packages cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Directions

  1. Wash and chop the strawberries. Puree until smooth using a food processor or blender.
  2. Whisk together strawberry puree, granulated sugar, and corn starch until smooth. Place in a medium saucepan and cook over medium heat until very thick, about 10-15 minutes. Set aside to cool.
  3. Line a 9″ Springform pan with parchment paper.
  4. Combine graham cracker crumbs and butter. Press this mixture firmly into the bottom of the Springform pan.
  5. In a large bowl, beat cream cheese with an electric mixer on high until smooth. Add powdered sugar and vanilla extract and mix until smooth. Add strawberry sauce and beat until smooth and fluffy.
  6. In a separate bowl, whip the cream until stiff peaks form. Fold into the cheesecake mixture.
  7. Spread cheesecake filling into prepared crust and refrigerate at least 6-8 hours or overnight until thoroughly chilled and set.
  8. Garnish with fresh strawberries.
