Lemon Turmeric Chicken Salad
Ingredients
- Zest of 1 lemon
- 1 Tablespoon of lemon juice
- 1/4 teaspoon of turmeric
- 1/4 teaspoon of cumin
- 1 cloves of garlic, minced
- 1/4 teaspoon of honey
- 1/4 cup mayonnaise
- 1/4 cup plain greek yogurt
- 2 Tablespoons of finely chopped fresh dill
- 3 cups of cooked chicken, shredded (example: rotisserie chicken)
Directions
- In a bowl, combine lemon zest, lemon juice, turmeric, cumin, garlic, and honey.
- Add mayonnaise, greek yogurt, dill and cooked chicken.
- Stir to combine. Season with salt and pepper
Recipe makes: 2-4 servings
