Spice Up Your Grilling I Watermelon Avocado Salsa

Grill season is in full swing. Check out some of our favorite marinades and spice rubs.

Southwestern Marinade
1/2 cup cilantro leaves
1/4 cup orange juice
1/4 cup olive oil
1 whole jalapeno pepper, sliced
1/2 teaspoon salt
Combing all the ingredients.
Best with chicken, flank steak, pork chops, scallops, mahi mahi, bell peppers, summer squash, and zucchini.

Ginger Sesame Marinade
1/4 cup low sodium soy sauce
1 Tablespoon fresh ginger, grated
1 Tablespoon sesame oil
2 scallions, sliced
1/4 teaspoon crushed red pepper
Combine all the ingredients.
Best with London broil, pork tenderloin or chops, shrimp, salmon, bell peppers, eggplant, and mushrooms.

Cajun Rub
1 Tablespoon dry mustard powder
1 Tablespoon ground cumin
2 teaspoons celery seeds
1.5 teaspoons black pepper
1 teaspoon salt
1 teaspoon brown sugar
1/8 teaspoon cayenne pepper
Combine all the ingredients. Coat meat with a little oil before applying the rub.
Best with chicken wings, steak, pork tenderloin or chops, shrimp, and salmon.

Fresh Herb and Garlic Rub
2 teaspoons garlic, chopped
1.5 teaspoons fresh basil, chopped
1.5 teaspoons fresh thyme, chopped
1.5 teaspoons fresh rosemary, chopped
1/2 teaspoon salt
1 teaspoon black pepper.
Combine all the ingredients. Coat meat with a little oil before applying the rub.
Best with chicken, turkey cutlet, pork chop, summer squash, and zucchini.

Watermelon Avocado Salsa

Ingredients
1/2 cup white onion, diced
1/4 cup lime juice
4 cups watermelon, diced
1 jalapeno, remove seeds and mince
1 avocado diced
1/3 cup cilantro
Salt to taste

Preparation

1. Rinse white onions in cold water to tame the flavor. Drain well.
2. Combine ingredients in a bowl and toss gently. Refrigerate for 15 minutes to let the flavors mix. Try serving over grilled fish or with tortilla chips. Enjoy!

Serves about: 4-6 people.
