Slow Cooker Chicken Burrito Bowls
Ingredients
- 1 1/2 pounds chicken breast or thighs
- 16-ounce jar of chunky, medium salsa
- 15- ounce can black beans, drained and rinsed
- 1 1/4 cups corn kernels, frozen
- 1 1/2 Tablespoons ground cumin
- 1 1/2 Tablespoons chili powder
- 1 1/2 Tablespoons garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups cooked rice.
- 2 Tablespoons fresh cilantro, chopped
Directions
- Add all ingredients to the slow cooker except the cilantro. Stir to make sure ingredients are mixed well.
- Put the cover on the slow cooker. Cook on high for 4 hours or low for 8 hours.
- Transfer the cooked chicken to a large plate. Shred the chicken with 2 forks. Return the shredded chicken to the slow cooker.
- Serve chicken mixture over cooked rice. Top with the cilantro.
- Optional toppings: avocado, shredded cheese, tomatoes, lettuce, sour cream, crushed tortilla chips, jalapeno slices.
