Ever notice how much food gets wasted throughout the week? Reducing food waste can help support the environment and your wallet! Here are some tips to use food scraps:
1. Make your own vegetable broth. After peeling and chopping vegetables, put the scraps into a plastic bag. Onions, garlic, carrots, celery, mushrooms work well. Place the bag in the freezer until the pile grows large enough to make broth.
2. Freeze leftover herbs. Wash & chop leftover herbs. Place herbs in ice cube trays. Fill the cubes with water (or olive oil), and then place in the freezer.
3. Freeze leftover tomato paste. Use a spoon to scoop leftover tomato paste onto a lined baking sheet. Place in freezer until the tomato paste solidifies. Once frozen, transfer into plastic bag and freeze for up to 3 months.
4. Turn stale bread into croutons. Cut loaf of stale bread into cubes, toss them in olive oil with your choice of seasonings (garlic powder, pepper, rosemary, salt). Arrange them on a sheet pan. Place in oven at 400°F for 10-15 minutes, or until crispy and golden.
5. Regrow green onions in water. Place leftover green onions in a glass with the white side of the onion down. Fill with water and place in a sunny area of your home. Watch as the green part regrows to use for another time. Just make sure to replace the water every few days.
6. Use every part of the vegetable. Leave the skin on potatoes for extra fiber. Chop up the stems of broccoli or kale and sauté them. Freeze leftover fruits or vegetables to use in stir fries or smoothies.

Ginger Garlic Broccoli
Ingredients
1 broccoli head, cut using both florets & stems
4-6 cloves of garlic, minced
1 teaspoon ginger, minced
2 Tablespoons water
2 Tablespoons olive oil
2 Tablespoons low sodium soy sauce
1 teaspoon sugar
1 teaspoon sesame oil (optional)
1 teaspoon corn starch
Directions
- Heat oil in pan. Add garlic and ginger, sauté until slightly golden.
- Add broccoli stems and florets. Stir to mix in with garlic and ginger, let cook for about 3-4 minutes. Test doneness with a fork.
- Once broccoli is slightly softened, take the broccoli mixture out of the pan, and place onto a plate.
- In the same pan, add soy sauce, sugar, water, sesame oil, and corn starch. Stir until the sauce thickens.
- Add broccoli back into the pan, toss to mix in with the sauce.
- Serve with rice or noodles, paired with your choice of protein.
