Shrimp and Corn Fritters with Mango Salsa
Ingredients
- 1/2 pound fresh shrimp, chopped
- 1 cup fresh corn kernels, removed from the cob
- 3/4 cup all purpose flour
- 1 large egg
- 1/4 cup milk
- 2 Tablespoons canola oil
- 1 ripe mango, diced into 1/2 inch cubes
- 1/4 small red onion, diced into 1/4 inch pieces
- 1/4 cup fresh cilantro, roughly chopped
- 1 Tablespoon fresh lime juice
Directions
- For the fritters: In a bowl, combine shrimp, corn, flour, egg, milk, and a pinch of salt and black pepper. Mix until just combined.
- Heat oil in a large skillet over medium heat until oil is glistening.
- Drop spoonfuls of batter into the skillet, flattening slightly with a spatula. Cook for 2-3 minutes per side, until golden brown and cooked through.
- Remove fritters from the pan and place on a paper towel lined plate to drain excess oil.
- For the mango salsa: In a separate bowl, gently combine the diced mango, red onion, cilantro, and lime juice. Season with a pinch of salt.
- To serve, arrange the warm shrimp and corn fritters on a plate and spoon a generous amount of the fresh mango salsa over top. Enjoy!
