|Greek Pasta Salad|
1 pound Penne pasta, cooked and cooled
1 pint cherry tomatoes, cut in half
1/2 cup kalamata olives, pitted
1 bunch of green onions, chopped
1/4 cup fresh dill, chopped
1 cup feta cheese, crumbled
1 English cucumber, chopped
1 small red onion, sliced thin
2 red bell peppers, chopped
4 teaspoons olive oil
1/2 cup red wine vinegar
1 tablespoon dijon mustard
1/2 teaspoon oregano, dried
1 teaspoon garlic powder
2 tablespoons lemon juice
Salt and pepper to taste
1. Combine cooked and cooled pasta with chopped vegetables, olives, and cheese.
2. Whisk together dressing. Taste and adjust flavor as desired.
3. Add dressing to pasta mixture. Serve chilled. Enjoy!
