|Cherry Tomato Pesto Pizza|
1 pound pizza dough, room temperature
1/4 cup pesto
Salt and pepper, to taste
1 cup cherry tomatoes, sliced in half
1 red bell pepper, sliced
1/2 cup red onion, sliced
8 ounces goat cheese
4 cup arugula
1 tablespoon balsamic reduction (optional)
1. Preheat oven to 400° Fahrenheit. Stretch out pizza dough on oiled baking sheet.
2. Spread pesto onto the pizza dough. Season the crust with salt and pepper. Top pizza with tomatoes, bell pepper, onion and goat cheese.
3. Bake for about 20 minutes or until crust is slightly browned, checking half way through.
4. When the pizza is done cooking remove it from the oven and top with arugula. For a little more tang and sweetness, drizzle with balsamic reduction. Enjoy!
