Tomatoes are a great source of antioxidants, vitamin C, potassium, folate, and vitamin K. Depending on the variety and cooking method, their flavor can range from earthy, sweet, tangy, and sour. Here are a few ideas on how to incorporate tomatoes.
Stewed tomatoes. This is a great way to save your garden gold for the winter months. 
Roasted tomato basil soup. Pair this with a grilled cheese for a garden-fresh twist on a comfort food classic.
Tomato pesto puff. Roll tomatoes and pesto into frozen puff pastry dough and bake. A fancy fun crispy cheese tomato appetizer.
Slow roasted tomatoes. These puppies are well worth the wait. Spread tomatoes on a baking sheet an toss with oil, salt, and pepper. Roast at 350 degrees for about an hour. Sweet and savory goodness that is great to add cold to a sandwich or warm as a side dish or on bread with some cheese and balsamic.
Fresh salsa. Spice it up or keep it mild. Add in some roasted corn or beans for your own twist.

Cherry Tomato Pesto Pizza
Servings: 8
1 pound pizza dough, room temperature
1/4 cup pesto
Salt and pepper, to taste
1 cup cherry tomatoes, sliced in half
1 red bell pepper, sliced
1/2 cup red onion, sliced
8 ounces goat cheese
4 cup arugula
1 tablespoon balsamic reduction (optional)
1. Preheat oven to 400° Fahrenheit. Stretch out pizza dough on oiled baking sheet.
2. Spread pesto onto the pizza dough. Season the crust with salt and pepper. Top pizza with tomatoes, bell pepper, onion and goat cheese.
3. Bake for about 20 minutes or until crust is slightly browned, checking half way through.
4. When the pizza is done cooking remove it from the oven and top with arugula. For a little more tang and sweetness, drizzle with balsamic reduction. Enjoy!
